Even though Coulis is most often made from berries, any fresh or frozen juicy fruit can be used to create a sauce that's lovely served with manna bread or raw bread, raw vegan ice cream, fruit pie, fruit salad, or anything chocolate. Try berry, cherry, peach, pineapple.
2 cups fresh or frozen (raspberry)
1 cup pitted dates
Place the fruit in a blender with a small amount of purified water and process until smooth.
Loosely separated the dates adn add them to the blender. Process until smooth. (sweeter fruit will require fewer dates.) If your dates are very dry, process them for a minute, then turn the blender off and allow the dates to remain in the pureed fruit for a few minutes to soften. Continue processing until smooth.
Stored in a sealed glass jar in the refrigerator, Fruit Coulis will keep for up to 4 days.
