Raw Summer Italian Soup
1 avocado (add more for extra creaminess)
4 tomatoes, skinned
A generous bunch of basil
1/4 of a cup of cold pressed oil (olive, hemp or blend)
All you have to do is put the avocado (peeled and stoned), skinned tomato, basil and oil into a blender and whizz until smooth. For extra smoothness you can put through a sieve (removes the tomato pips). I also like to have a drizzle of oil on the top and also to rip a few extra basil leaves on top (because I love basil!).
Serve either chilled, or slightly warmed.
This is another great quick, easy and tasty soup to eat when either cleansing or maintaining an alkaline diet. It is a lot lighter than some of the other alkaline raw soups, so it is more spring/summer.
Cucumber & Mint Raw Soup2 cucumbers
2 celery sticks (optional)
1 ripe avocado
Handful of mint leaves
1 garlic clove or ½ a shallot
Squeeze of lemon juice
Chopped fresh parsley
Blend all ingredients and place in the fridge to chill.
Serve when chilled and garnish with the chopped parsley.

I tried your Summer Italian Soup yesterday morning. I served it hot for breakfast along with some bread, and my kids and wife loved it. Thank you for sharing this recipe! I added a little bit more mint on it, and it tasted pretty good!
